AmByth O.W. Riesling

“Am Byth” is Welsh and it means forever. When Phillip Hart started this winery in 1998, he brought his Welsh roots in both the name and in the desire to grow naturally - to make pure wine as he was taught by his father. When his son, Gelert, started coming here to visit his father, he too felt the pull to be near the land and work cleanly - with the earth not against it. After travels and school (& meeting his wife!), Gelert & Robyn have made their home here in this amazing place. Phillip is still involved but it is this truly amazing couple who takes AmByth into the future!

Gelert & Robyn believe that three principles run through the very core of AmByth and these principles shape every thought, direction, decision, and action:
(1) 100% dry-farmed
(2) certified Biodynamic farm
(3) making wine without chemicals - being natural winemakers

In Paso Robles, these principles are not easy all the time but if they are to be true to the name - AmByth - then’ forever’ is a gift that is passed on to the children. And this can only be done if the land survives!

This Riesling was hand-harvested very early in the morning and gently pressed by foot. Did you know food-trodden crush is traditional because it is the gentle-ist (is that a word?!) to crush the grapes thus not extracting too many harsh tannins?!!!
Juice and skins macerate for 4 days with multiple gentle, punch downs daily so everyone gets to know everyone! Then pressed and aged in California Clay Amphorae (Novums) for 9 months. Racked and bottled during descending moons. In the words of Robyn “a gentle decant is suggested but not required”. 

For me, this is a stunning wine that jumps out of the glass with aroma’s of orange blossom and dried peaches. But the textured yet balanced meyer lemon acidity keeps it tingling in the mouth and the lime, ginger, spice vibes makes me want to almost gulp it! Way better when slightly less cold, imo!)
